MY VEGAN RECIPE EBOOK🍍

Ingredients:
2¾ Cups of Oat Flour
3 Medium-Large Ripe Bananas
3 Large Dates
1/4 cup Mixed Nuts/Seeds
1/4 cup Raisins/goji berries
1/2 cup chocolate chips (optional)
½ Cup Unsweetened Almond Milk
¼ Cup Ground Flax
2 Tbsp Lemon Juice
3 Tsp Cinnamon
1 Tsp Baking Soda
1 Tsp Baking Powder

Method:
Preheat oven to 325° (165 C)
1. Mix Dry Ingredients Together In A Large Bowl
(Oat Flour, Flax, Cinnamon, Baking Soda, Baking Powder)
2. Blend together, bananas, almond milk & dates
3. Add ALL ingredients into a large mixing bowl and stir together well.
4. Fill muffin tray (should make 12 muffins)
5. Bake at 325°F (or a bit hotter, depending on your oven) for 20-25 minutes.

  2. I've got these in the oven right now. I bake a gluten-free vegan muffin every Tuesday for our community social gathering. I made jumbo muffins in a silicone muffin pan. Hope they turn out as good as yours!

  4. Great recipe, so going to bake this!! The only con would be that Silk almond milk has unhealthy gums and additives. I'd recommend either homemade or bought mlik with just the water, nuts, and/or salt if possible (Whole Foods carry this). Hope y'all enjoying this! So excited to try!

  5. U inspired me to make improv muffins. Just blended up apples, sweet potatoes, maple syrup water lemon and vanilla extract for wet, and your stuff for the dry. Added nuts and cranberries. Didnt measure anything except the oats and baking soda/powder. Turned out great!

  6. I was wanting to make some banana muffins, so I searched your channel because your recipes always deliver!! I just made these with easylife mini choc chips, and they were delicious. I like that they are gluten free as well. ☺

  7. I just made these. I got a1/4 cup of regular flax and ground it which makes more than 1/4 cup. I meant to scrape off the excess and forgot. I am pretty sure it caused mine to turn out nothing like yours. Also I thought I ground the oats well but I question it. Needless to say, too much flaxseed ruins the recipe unless I did something wrong.

  8. Tried this today as I got fed up eating expensive protein bars. WOW! They turned out brilliant, the only addition I made was added 40g worth of protein whey banana flavour powder. Thank you for the the recipe!!!! Next time I will split out the final mixture into separate bowls and then make different varieties (ie pumpkin seeds etc, another with blueberries, another with cherries and coconut etc etc).

  9. Don't delay! Make these TODAY! Sadly, this recipe has been on my "to make" list for well over a year. The list of recipes I want to try is always too long but Derek's recipes never disappoint and these little muffins were so darned good, I've already eaten 3! I added 1/4 cup mini chocolate chips and 2 Tbs maple syrup. I love that's it's one of those flexible recipes that we can play with the ingredients so I can't wait to test with coconut flakes, blueberries and a variety of nuts, seeds and dry fruit. It's like granola in a muffin. The house smells divine and I'm thrilled to have these absolutely perfect little treats! Thank you!!! 😘
